Vegetable Bundles
Categories: Vegetables Yield: 4 This recipe is an adaptation of one from the Texas Fresh Promotional Board. Ingredients: 1 medium sweet onion, sliced - 8 asparagus spears, trimmed and cut in 1/2 inch pieces - 4 large mushrooms, sliced - 1 zucchini, sliced - 1 small sweet red pepper, cut in strips - 2 garlic cloves, minced - 1 tablespoon minced gingerroot - 1 tablespoon chopped fresh parsley or chives - 2 tablespoons rice or white wine vinegar - 1 tablespoon olive oil - pepper Directions: Cut waxed paper into four 12-inch squares. Distribute vegetables evenly on each square. Sprinkle with garlic, gingerroot and parsley. Drizzle with vinegar and oil. Add pepper to taste. Fold paper in half over vegetables. Beginning at one end, fold over paper in small intervals, crimping to tightly close package. Package will have a half-circle shape. (Packages can be made in advance up to this point.) Just before serving, place two bundles on microwavable dish. Cook on high (100 per cent power) three minutes for tender-crisp vegetables. Do not open package; let stand while cooking remaining packages. Serve on individual dinner plates. Slit with knife or scissors to open.
