Spanish Peppers
Categories: Main Dishes, Vegetables Yield: 2 This micro stir-fry is delicious with anything barbecued and great sprinkled with crunchy garlic croutons as a side dish. Ingredients: 2 small sweet peppers, red, green or yellow, slivered - 1 cup diagonally sliced celery - 1/2 small onion, finely chopped - 1 tbsp olive oil - 1 tbsp. chopped fresh basil (or 1/2 tsp dried) - 1/2 tsp. salt - 8 oz can tomato sauce - croutons (optional)* Directions: Mix peppers, celery and onion with oil in bowl or casserole. Cover and microwave at High 3 minutes or until onion is soft. Stir in basil, salt and pepper to taste and tomato sauce. Microwave at High 3-4 minutes or until peppers are tender.
