Potato Soup

Yield: 6 

Ingredients: 3 cups water - 1lb potatoes (about 3 large), peeled and sliced - 1 onion, chopped - 1 carrot, chopped - 1/2 teaspoon dried thyme - 1/2 teaspoon salt - 1/8 teaspoon pepper - 2 cups milk

Directions: In a large saucepan or stockpot, combine water, potatoes, onion, carrot, thyme, salt and pepper. Bring to a boil; lower heat, cover and gently simmer for 45 minutes. Puree in a food processor or blender. Return to saucepan, stir in milk and gently reheat until milk is heated; do not boil.
