Philly Cheese Steak Sandwich

Philly Cheese Steak is a popular sandwich south of the border. Pick up rare roast beef at the deli to make this one for lunch or a hearty snack. Ingredients: 1 small onion, thinly sliced - 1 each small red and yellow bell pepper, slivered - 2 tsp. olive oil - dried thyme, salt and pepper - 6 mushrooms, thinly sliced - 2 sandwich rolls or individual subs - 1 cup shredded mozzarella cheese - 8 thin slices (about 125g) sliced rare roast beef Directions: Mix onion and peppers with oil in large pie plate or shallow casserole. Cover and microwave at High 2 minutes. Sprinkle with thyme, salt and pepper to taste. Stir in mushrooms and microwave, covered, 3-4 minutes longer or until tender. Split rolls horizontally. Hollow out slightly, if desired. Place on paper towel-lined plate. Top evenly with cheese; microwave at High 45-60 seconds or until melted. Layer roast beef over melted cheese.
