Perfect Gravy
Categories: Sauces, Beef Yield: 4-10 Directions: 1) Remove roast from pan and keep warm. 2) Pour off excess fat, leaving 1/4 cup pan drippings. Place roasting pan over medium heat. 3) Add 1/4 cup all-purpose flour; stir until smooth. Continue to cook and slowly add 2 cups stock or water, stirring constantly. Season to taste. Strain if lumpy.
