Oven Fried Chicken With Peaches and Biscuits
Categories: Main Dishes, Chicken Yield: 4-6 A 19-ounce can of peach halves will contain four to six halves. Choose a 28-ounce can if you would like more peaches. Ingredients: 3 lbs chicken pieces - seasoned crumbs (recipe to follow) - 1/2 cup milk - 1 can (19 oz) peach halves (reserve syrup or juice) - whole cloves - Biscuits: 3 3/4 cups biscuit mix - 1 1/2 tablespoons sugar - 1/2 teaspoon salt - 1/4 cup butter or margarine - 1/2 cup buttermilk - 1/4 cup club soda Directions: Dip chicken in bread crumbs, then in milk, then in crumbs again, making sure all sides are coated evenly. Arrange chicken, skin side up, on a large lightly greased baking pan. Bake at 375F for 50 minutes. Meanwhile, insert two or three whole cloves in the bottom of each peach half. Set aside. Biscuits: Combine biscuit mix, sugar and salt in a medium bowl. Cut in butter until mixture resembles coarse crumbs. Stir buttermilk and club soda into dry ingredients until combined. Turn out dough and knead by hand until smooth. Pat dough into a square about 3/4 inch thick. With a biscuit cutter, cut out 12 biscuits. After chicken has baked for 50 minutes, remove from oven. Place peach halves and biscuits around chicken. Bake for 18 to 20 minutes or until biscuits are golden; baste peaches with reserved syrup after 10 minutes.
Seasoned bread crumbs (ingredients): 1 cup fine dry bread crumbs - 2 teaspoons dried thyme - 2 teaspoons paprika - 1 teaspoon dried marjoram - 1 teaspoon lemon pepper - 1 teaspoon salt -1/2 teaspoon celery salt - 1/2 teaspoon onion powder - 1/2 teaspoon ground mace - 1/4 teaspoon garlic powder Directions: In a small bowl, mix all ingredients thoroughly.
