Onion Tempura

Yield: 4 

     Japanese onion rings are crisp, sweet and not heavily battered. You can add other vegetables too. 

Ingredients: 2 onions - Batter: 1 egg - 1 cup ice water - 3/4 cup sifted all-purpose flour - 2 tbsp. cornstarch - 1 tsp. baking powder - oil for deep frying 

Directions: Cut onions in half through root. Cut each half into quarters. Cut off root and onion will fall into wedges. Mix together egg and water. Sift together flour, cornstarch and baking powder in large bowl. Stir in liquid ingredients gently. Do not over mix. Mixture will have some lumps in it. Heat oil in wok on high heat. Add tempura a few at a time. Fry until batter is crisp. Drain on paper towels. Serve with soy sauce mixed with chicken stock, rice vinegar and grated ginger. Serves 4.
