Italian Stir Fry

Yield: 5 

Ingredients: 2 tbsp olive oil - 1 garlic clove, minced - 1/2 green pepper, diced - 1/3 cup chopped green onion - 1 tomato diced - 1/2 cup chicken stock - 1 tsp dried basil - 1/2 tsp dried oregano - 1/2 tsp salt - 1 can (14 oz) Libby's red kidney beans, homestyle (drained and rinsed) - 1 1/2 cups dried rotini pasta, cooked and drained (3 cups cooked pasta)

Directions: In a large frypan, heat olive oil over medium heat and add garlic, green pepper, onion and tomato. Stir fry vegetables 3-5 minutes, until softened. Add stock, seasonings, Libby's Red Kidney Beans and heat through. Add cooked pasta and toss gently to heat through. Makes 5 1-cup servings.
