Irish Stew (4 to 6 servings)
Categories: Main Dishes, Stews Yield: 4-6 Ingredients: 1 kg (2.2 lbs) boneless stewing beef, cut into 1 1/2 to 2 inch cubes - 1 onion, coarsely chopped - 1 cup water, beef broth or bouillion - 3/4 cup beer, water or beef broth - 3 bay leaves - 1 teaspoon dried thyme - 1 teaspoon dried rosemary - 1/2 teaspoon salt - 2 lbs potatoes (about 4 large), cut in 1/2 inch slices - 2 medium carrots, cut in 1/2 inch slices - parsley Directions: In a large saucepan, layer half the stewing beef, chopped onion, then remaining meat. Add water and beer, cover and bring to a boil. Reduce heat and simmer gently for an hour. Stir meat and onions. Stir in bay leaves, thyme, rosemary and salt. Remove half of the meat mixture and stock; set aside. Cover meat mixture left in saucepan with sliced potatoes and carrots. Cover vegetables with remaining half of meat and stock. Cover and bring to a boil; reduce heat and simmer for 45 minutes or until vegetables and meat are tender. Remove bay leaves before serving. Sprinkle with chopped parsley.
