Herbed Parmesan Coated Fish

Ingredients: 400g pkg frozen fish fillets - 1 egg - 2 tbsp water - 1/4 cup each all-purpose flour and Parmesan cheese - 2 tsp lemon peel - 2 tsp oregano - 1/2 tsp each salt and freshly ground black pepper - 1 to 2 tbsp vegetable oil 

Directions: 1) Thaw fish according to package directions. Separate into fillets. In a small wide shallow dish, whisk egg with water. In another small wide shallow dish, stir flour with Parmesan, lemon peel, oregano, salt and pepper. Use one hand to dip a fish fillet in egg mixture, coating evenly. Then use your other hand to coat fish in flour mixture, shaking off any excess. Put fillet on a piece of waxed paper and repeat with remaining fish. Heat 1 tablespoon oil in a large wide (preferably non-stick) frying pan over medium-high heat. Add fish, but do not crowd pan. (If necessary, cook in two batches and use extra oil.) Cook about 3 to 4 minutes per side, until fish is golden and flakes easily with a fork.
