Colcannon

Yield: 3-6 

Ingredients: 2lbs potatoes (about 3 large) peeled and diced - one-half small head cabbage, shredded (about 3 cups) - six green onions, chopped - 1/2 cup milk - 1/2 teaspoon salt - 1/8 teaspoon pepper - 1/8 teaspoon mace - melted butter

Directions: In boiling water, cook potatoes until tender; drain. Place cabbage and green onions in a small amount of boiling water and bring to a boil. Reduce heat and simmer until cabbage is crisp-tender, about 5 to 10 minutes. Drain. Mash potatoes until smooth. Gradually beat in milk. Stir in salt, pepper and mace. Stir in cabbage. Drizzle with melted butter.
