Our Recipe of the Month (October 2001)

     Each month I will add a new recipe to this page. The featured recipes will be all winners of our Recipe of the Month contest. Randy's Chicken Parmesan 

      I cook at a four star hotel in Ontario Canada. This is a simple recipe I developed, which is a hit with my co-workers. Preparation time is about 10 minutes. Cooking time is approximately 35 minutes. Below is the amount of ingredients you would need to serve a family of four. For larger groups increase the ingredients proportionately.

Ingredients:
- four large boneless, skinless chicken breasts
- four eggs
- two cups pulverized unsalted soup crackers
- four servings of spaghetti
- one can marinara sauce
- Italian Seasoning Blend
- garlic powder
- thinly sliced swiss cheese
- one cup cooking oil

Directions:
     Take enough unsalted crackers to coat four large chicken breasts (approximately two cups, depending on the size of your breasts). Smash the crackers into tiny crumbs. Mix in 1 tablespoon of Italian Seasoning Blend and 1 teaspoon of garlic powder. Place this mixture into a large round bowl.      

 

     Crack four eggs into a separate large round bowl. Mix the eggs well, using a fork.
     Dip your breasts, one at a time into first the egg mixture then the cracker coating. Make sure chicken is well coated. Place chicken onto a greased baking sheet and cook in the oven at 350 degrees. Chicken should be cooked for approximately 30 minutes, depending on your oven. Make a small incision in one of the larger breasts to check for doneness. When chicken is 80 percent cooked remove it from the oven.
     Place four servings of raw pasta into a boiling pot of water. Cook approximately 10 minutes until spaghetti is tender.
     In a separate pot add 1 500 ml can of marinara sauce. Add 1 tablespoon of Italian Seasoning Blend and 1 teaspoon of garlic powder and heat over medium heat until steaming. If you wish, the marinara sauce can be replaced with your favorite can of ready-made spaghetti sauce.
     Immediately upon removing chicken from the oven (at the same time as you start cooking your pasta and sauce) place chicken into a frying pan containing one cup of hot cooking oil. Cook chicken for approximately two minutes on each side, until each piece is golden brown.
     Place one piece of chicken and one portion of pasta on each plate. Place thinly sliced swiss cheese (enough to cover the chicken) over each piece of chicken. Cover the pasta and chicken with sauce. Serve and enjoy.
